FLU A (H1N1)
Flu A / H1N1 is a new influenza virus that spreads from person to person, most likely through the same method as the usual influenza virus spread. According to laboratory test results, most of the genes found in Flu A have 2 types of flu virus genes, viruses in pig animals in the European & Asian regions, bird flu viruses and human genes.
PERSONAL HYGIENE
Bad habits can contaminate food, so workers must pay more attention to the things they do using their hands and maintain personal hygiene. Activities that must be avoided are:
- Scratching the head
- Holding hair
- Wipe or hold life
- Rubbing ears
- Hold open pimples or wounds
- Using a dirty uniform
- Cough or clean in the hand
- Spit
FLOW OF FOOD
Maintaining the quality of the food served is the most important part of any food business. The initial steps that need to be considered in the food process itself include; purchase, receipt and storage. This initial part is an essential part to look at, where this process will affect the quality afterwards.
